Especially on weekends, if I don’t write up the previous day’s article early in the morning, it doesn’t get written until much much later. So here we are on Sunday afternoon…
I took a walk, worked, and probably had an amazing day, though many of the details escape me at the moment.
I made my pasta free lasagna again. I realize the lack of pasta disqualifies it from actually being lasagna. It would be like serving spaghetti and meatballs without the spaghetti yet still calling it spaghetti and meatballs. However it ends up being pretty “heavy” due to the meat and ricotta cheese so it has the heft of lasagna when it is on your fork. We enjoy it and it is a good use for extra red sauce.
