Still a little distracted from work but had two good calls with clients and finished all of my packing.
I also cooked the last of the egg bakes for our trip.
“Egg Bake” is a “crustless quiche”.
However I’m claiming that the word quiche presumes thee is a crust.
This “crustless quiche” isn’t an ideal term.
Chris and Laura came up with “egg bake”.
On reflection, that feels to me like a Minnesota idiom along the lines of “hot dish casserole” or “uff-da”.
So I think the general name should be “egg casserole”.
Anyway, it was a good day. I’m all ready for departure tomorrow.
