Day 530 – Sunday

I went to the downtown farmers market and then to A&A Supermarket for curry ingredients. Today’s will be chicken with eggplant, squash, and tomato. I think I’m getting faster at making it but making my own curry paste still takes about an hour from beginning to end. It’s worth it for the flavor. I think I want to start experimenting with some different chilis as well.

I caught up with writing this blog, turning “notes” entries into finished entries and also planned out my week. I’ll be able to eat leftovers for a couple of days as well as having a stock of frittatas for breakfast (the crustless “quiche” I made yesterday). I need to make another batch of red sauce sometime this week…
